Hotel California Restaurant & Cantina to Open May 5

Hotel California Restaurant & Cantina is set to open its first location in Las Vegas on May 5 and will feature Baja California-inspired cuisine, vibrant décor, a line of signature Mezcal liquor, a Cigar Lounge and live entertainment. The newest addition to the Summerlin dining scene and the latest restaurant concept by Jimmy Maddin, Hotel California Restaurant & Cantina is located at 1050 S. Rampart Blvd in the Boca Park Fashion Village.

Open to the public, the grand opening celebration starts Thursday, May 5 through Saturday, May 7 from 5:00 p.m. to 10:00 p.m. nightly. Outdoor festivities include live music and entertainment, complimentary food and refreshments, Margarita snow cones and more. Guests can enjoy the complete signature menu inside the restaurant.

Hotel California Restaurant & Cantina transports the coastal vibe of Baja California, Mexico to the desert with sea-inspired décor, lively entertainment and bold dining features. Owner Jimmy Maddin created the concept to serve freshly made Baja-California cuisine to customers in a laid-back atmosphere. Weststar Architects of Las Vegas collaborated with Maddin to develop his vision into the overall design. The result is a vibrant yet relaxed environment.

Hotel California Restaurant & Cantina offers two chef tables that seat 10 to 12 guests each. Chef tables are custom-made with one-of-a-kind, hand-painted chairs and adorned with candles, seashells and sea glass accents. Guests can also enjoy food off the grill and signature cocktails on the outdoor patio. The patio’s open-air design was inspired by swim up bars found in many Baja California resorts.

“I’ve spent most of my life in the culinary business, and without a doubt, the special flavors and overall vibe of Baja California have inspired me the most,” Jimmy Maddin says. “Our menu items are prepared daily with the freshest ingredients – our focus is to provide healthy food, quality service at an affordable price and an overall memorable experience for our customers. I want to change the way Las Vegas thinks about food.”

Executive Chef Martin San Roman and his team incorporate the unique flavors and fresh ingredients of Baja California cuisine in signature dishes like Ceviche de Tijuana; lime-marinated ceviche, Arrachera Marinada; marinated beef steak with housemade spice rub, Pollo al Mole Rosarito; Achiote marinated chicken breast grilled and served with salsa and Baja Tuna Salad with grilled Ahi tuna and cucumbers. A variety of sugar-free and gluten-free desserts artistically prepared by Pastry Chef Amanda Wolsey are available.

“I think the Las Vegas community is hungry for a change and we offer a fresh approach to food and live entertainment. We create a fun environment for our guests, ” says Martin San Roman, executive chef.

Hotel California Restaurant & Cantina will offer complimentary live music and entertainment. Entertainment includes local musicians and tribute bands along with salsa bands and flamenco guitarists. Among the unique restaurant features, a Mezcal Bar displays dozens of glass bottles upon shelves of the signature liquor, Mezcal. Mixologist Sean Mayhew creates signature cocktails using fresh ingredients such as blood orange, sage and fresh fruit. Patrons can also enjoy a cigar in the ‘Man Cave’ Cigar Lounge. Through a separate door connected to the restaurant, the ‘Man Cave’ features flat screen TVs, an audio system and a self-serve well-stocked humidor. The cigar room is also equipped with a state-of-the-art air ventilation system.

In keeping with the tradition of healthy eating, Hotel California Restaurant & Cantina offers a children’s menu with nutritional menu selections. Some menu highlights include Baja Taco Doggie; two corn tortilla tacos, beef hot dog, diced tomatoes served with soup or rice, Ham and Cheese Quesadillas, Chicken Tacos and Macaroni and Cheese Omelette with fresh fruit and vegetables.

“For families with children we created a special kid’s menu with healthy options. While parents look over the menu we bring out fresh fruit for the kids. We offer great food at a great price point. The outdoor patio will serve Baja-style small plates under eight bucks. We wanted to create an environment that the whole family could enjoy without breaking the bank,” Maddin said.

Hotel California Restaurant & Cantina is open Sunday through Thursday from 11:00 a.m. to 11:00 p.m. and Friday through Saturday from 11:00 a.m. to 2:00 a.m. The 8,818 square-foot space accommodates 268 people seated and 600 cocktail style.
