Under the direction of new Executive Chef Carlos Buscaglia, HEXX Kitchen + Bar at Paris Las Vegas has introduced a variety of flavorful new menu items, highlighting fresh, seasonal ingredients for summer (Pictured: Benton’s Ham Pizza – Photo credit: HEXX Kitchen + Bar).
Meant to be enjoyed with panoramic views on HEXX’s Strip-side patio, there are several new selections on the lunch and dinner menus, available now. New snacks and appetizers include candied smoked bacon with pickled red onions; roasted beets served with light and creamy pistachio yogurt, feta cheese and candied quinoa; pork rinds topped with basil, mint, Fresno peppers and lime vinaigrette; and buffalo calamari served with celery, carrots, buffalo hot sauce and ranch.
New entrées include king salmon served with black quinoa risotto, wild mushrooms and crispy garlic gremolata; gemelli pasta made with beef and pork Bolognese, topped with burrata and fresh basil; gnocchi made with lobster and smoked pork belly, topped with fresh peas and herbs; scallops served with heirloom carrots, spinach, smoked onion purée and crispy Benton’s ham; vegetable pizza topped with peppers, broccolini, Brussels sprouts, tomato and fresh mozzarella; and Benton’s ham pizza topped with Boursin cheese, arugula and an over easy egg.
