La Cave Wine and Food Hideaway to Bring in The New Year with a Celebratory Feast

at Wynn Las Vegas will treat guests ringing in 2014 to a decadent prix fixe dinner, complete with the option to pair the restaurant’s hard-to-find wine selections through a New Year’s Eve feast (Pictured: Poached Lobster Tail)

Priced at $95 per person, the restaurant will offer an early seating four-course menu with optional wine pairings for an additional $45 per person from 5 to 6:30 p.m. Wine Director Chloe Helfand has expertly paired wines to complement the flavorful menu created by Executive Chef William “Billy” DeMarco, starting with a crudo tasting including tuna avocado soy, Hamachi pickled vegetables, octopus olive tomato and salmon caviar vinaigrette, paired with Clos Alivu, Patrimonio, Vermentino, 2012.

Made with the ultimate holiday flavor, the second course will include pumpkin ravioli with braised short rib, trumpet mushrooms and mustard greens and will go well with Patrick Piuze, Terroir De Chablis, Chardonnay, 2011. The main course will feature savory beef wellington accompanied with pan seared diver sea scallops, creamed spinach and potato gratin, paired with Ségla, Bordeaux Blend, 2006. To conclude the meal, guests may enjoy not only one, but an assortment of sweet treats from the chef’s selection of tasting desserts complemented by Kracher Cuvée, Beerenauslese, 2009.

Priced at $150 per person, the restaurant will also offer a late seating five-course menu with optional wine pairings for an additional $75 per person from 7 to 10 p.m. The menu will feature the same dishes as the early seating with an additional course including the delicious poached lobster tail accompanied with corn and bacon and surrounded by shrimp broth, paired with Patrick Piuze, Terroir De Chablis, Chardonnay, 2011. The third course including the pumpkin ravioli will instead be paired with a red blend of E. Guigal, Grenache, Syrah, Mourvédre, 2010.
